Kualitas Mikrobiologi Telur Ayam Berdasarkan Jumlah Total Mikroba dan Kolifrom di Pasar Tamiang Layang, Kabupaten Barito Timur
Microbiology Quality of Eggs Based on the Total Amount of Microb and Colifroms in Tamiang Layang Market, East Barito District
Abstract
Tujuan penelitian ini untuk mengetahui total jumlah mikroba dan Coliform pada telur ayam yang dijual di Pasar Tamiang Layang, Kabupaten Barito Timur, Provinsi Kalimantan Tengah. Total Sampel adalah 20 butir, dari seluruh pedagang telur ayam yang berjumlah 5 pedagang. Pengujian jumlah total mikrob (TPC) dan Coliform pada telur menggunakan metode SNI: 2897:2008 tentang Metode Pengujian Cemaran Mikroba dalam Daging, Telur dan Susu serta Hasil Olahannya. Hasil penelitian menunjukkan TPC <1 X 10 2 sampai 9,1 x 10 5 CFU/gram dengan rata-rata 1,9 x 10 5 CFU/gram yang sudah melebihi ambang batas maksimum cemaran mikroba pada pangan. Sedangkan Coliform masih <3,6 MPN/gram
